The Smilodon
3-cup moka pot

Pour, and sit with it.

Granite-finish food-grade aluminium, a wooden-finish knob and handle you can hold while it is hot, and a safety valve. Stovetop coffee made the slow way — time as an ingredient, not a cost — and with the ease of no scales, no ratios and no permission needed.

The pot

Built for the daily brew, not the display shelf.

Food-grade aluminium for even heat. A matte granite finish that hides the marks of use. An unbreakable wooden-finish knob and handle you can grip while the pot is hot. Six parts, all of them serviceable, none of them clever for its own sake — the hand of a thing that is meant to be used, not admired. And a story: every object we make names something specific, and this one carries the Smilodon of the Ice Age.

How it brews

Three steps. About five minutes.

A ritual is the repeated act, valued for itself. This is a small one, and it asks for five minutes of your attention.

  1. 1 Fill the baseWater to just below the safety valve — never above it. Warm water gets you there faster and keeps the grounds from scorching.
  2. 2 Fill the funnel, close the lidMedium-fine grounds, level to the rim. Do not tamp. Brush the rim clean, screw the top on firmly by the handle, then press the lid down until it gives a soft click — an open lid leaks while you pour.
  3. 3 Low flame, and stay with itDo not leave the side of the pot while it brews. The moment it starts to gurgle, remove it from the heat. Pour straight away, and sit with it.
Usage & care

Treated well, a moka pot outlives the person who bought it.

ease first: no scales, no ratios, no permission needed. Aluminium does ask for a little more care than steel, and gives back a softer, rounder cup for it. Read this once and you will not need it again.

Before the first cup

Wash every part in warm water, then brew two throwaway pots — water and grounds, poured away. It seasons the aluminium and clears the metallic note of a brand-new pot.

Every day after

Let it cool, rinse with warm water, dry the parts separately and store it unassembled. That is the whole routine.

Do

  • — Brew on a low to medium flame, on gas or an electric coil.
  • — Stay with the pot while it brews, and take it off the heat the moment it gurgles.
  • — Press the top lid shut until it gives a soft click before you pour.
  • — Handle it gently. It is aluminium, and it dents.
  • — Use a heat diffuser if the pot is smaller than your burner.
  • — Lift and turn it by the handle only.
  • — Hand wash with warm water and a soft cloth or sponge.
  • — Dry fully and store the parts apart, lid open, so it can breathe.
  • — Check the gasket every few months and replace it once a year with daily use.

Don't

  • — No induction hobs. The aluminium body will not work on them.
  • — No dishwasher. It strips the finish and dulls the aluminium.
  • — No soap left standing, no bleach, no scouring powder, no steel wool.
  • — Never fill water above the safety valve.
  • — Never tamp the grounds, and never run the pot empty.
  • — Do not walk away mid-brew, and do not pour with the lid open.
  • — Do not put it in the oven, the microwave or the freezer.

If something goes wrong

Coffee leaks from the seam The top is not tight, or grounds are caught on the rim. Let it cool, brush the rim and gasket clean, and screw it down firmly by the handle. If it still leaks, the gasket is worn — swap it.
Nothing comes up Usually too little water, grounds packed too tight or too fine, or a flame so low there is no pressure. Check the water line first, then loosen the grind.
The coffee tastes burnt or bitter Too much heat, or it stayed on the flame past the gurgle. Drop the flame, and lift the pot the moment the stream pales.
Steam escapes from the valve Take it off the heat. The water was above the valve line, or the grounds are blocking the path. Let it cool completely before opening it.
Chalky white patches inside Hard-water scale. Brew a pot of one part white vinegar to three parts water, discard it, then rinse and run one plain water pot before brewing coffee again.
The top is stuck shut Never force it while hot. Let it cool fully, then hold the base in a cloth and turn the top by the handle. Warm water over the seam helps.
